Creamy Bacon & Broccoli Salad

Ingredients: 

  • 1/4 pound bacon
  • 2 heads Broccoli, cut bite-size
  • 1/2 cup raisins
  • 1/2 cup almonds, chopped
  • 1/4 cup red onion, diced
  • 1/2 cup Greek yogurt
  • 2 Tbsp raw honey
  • 2 Tbsp IGC's Peppered Bacon Olive Oil
  • 1 Tbsp IGC's White Balsamic
  • 1 1/2 tsp IGC's Smoked Sea Salt

Directions:

  1.  Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly brown, about 10 minutes.  Drain bacon slices on paper towels and crumble or chop. Set aside.
  2. In a large bowl whisk yogurt, honey, olive oil, and vinegar until smooth.
  3. Add bacon, broccoli, raisins, almonds, and onion and toss. Refrigerate until ready to serve.
