Triple Chocolate Muffins



  • 3/4 cups brown sugar, packed

  • 1/3 cups IGC's Chocolate Olive Oil

  • 6 tbsp. unsweetened cocoa powder

  • 6 tbsp. HOT water

  • 2 - 1/4 cups of apple sauce (2 eggs)

  • 2 tsp. vanilla extract

  • 1 2/3 cups all-purpose flour

  • 2 tsp. baking powder

  • 1/2 tsp. baking soda

  • 1/4 tsp. salt

  • 3/4 cups water (sour cream or greek yogurt)

  • 1 1/3 cups chocolate chips


  1. Preheat oven to 350 degrees. Line a standard size muffin tin with liners; set aside.
  2. In a large mixing bowl combine brown sugar and olive oil and mix until blended. In a separate bowl combine the cocoa and the hot water, whisk until a smooth paste forms. Add to the sugar and oil mixture, and mix until blended. Add the apple sauce and vanilla, mix until combined.
  3. In a separate mixing bowl, whisk together the flour, baking powder, baking soda and salt. Slowly whisk in the dry ingredients, then add the 3/4 cup water to the mixture. DO NOT OVER-MIX. Fold in 1 cup of the chocolate chip with a spatula.
  4. Using a large scoop, fill each liner about half way. Sprinkle the remaining ⅓ cup of chocolate chips on top and gently press into the batter. Place in the oven to bake for 15-20 minutes or until toothpick inserted in the center muffin comes out clean. Remove from oven, cool, and enjoy!
